Gluten Free Banana Bread Recipe

The nights drawing in and the weather is perfect for long walks at the weekends

Here’s a perfect high fat, gluten free, grain free and dairy free banana bread recipe that’s a real crowd-pleaser!

As it’s based on great fats such as almond, walnut, coconut, and eggs, it won’t affect your blood sugar levels in the same way as a regular grain based recipe, so it’s great if you’re trying to tone up in time for the Christmas party season.

Mind you, that still doesn’t mean you can eat unlimited amounts (even if it’s so tasty you want to!). If you want to increase the protein content, feel free to add some whey protein. Anyhow, without further ado, here it is:


  • 55g coconut flour
  • 55g ground almonds
  • 3 very ripe bananas
  • 8 tablespoons melted coconut oil
  • 5 tsp cinnamon
  • 3/4 tsp baking soda
  • 40g chopped walnuts
  • 4 eggs
  • 1/2 tsp vanilla extract
  • 1/4 tsp Himalayan salt



  1. Preheat the oven to 180ºC
  2. Line a 8.5 x 4.5 inch loaf tin
  3. Put coconut flour, ground almonds, cinnamon, baking soda & salt in a bowl & mix
  4. In another bowl whisk eggs, vanilla extract and 2 mashed bananas
  5. Pour the wet mixture into the dry then add the melted coconut butter
  6. Spoon the mixture into the loaf tin
  7. Slice the final banana (1cm wide)
  8. Decorate the loaf with the banana slices and chopped walnuts
  9. Bake for 40-45 minutes
  10. Let it cool before removing it from the tin, leave on a cooling tray

These ingredients are full of healthful vitamins, minerals, fats and oils – serve with some nut butter – our favourites are cashew and almond butter – delicious!
